Serves
4
  • 8 Dracula sausage links (mild or spicy, pork or chicken)
  • 1 loaf of crusty bread, sliced
  • Yellow or Dijon-style mustard, for serving
  • Dill pickles or pickled peppers, for serving
  • 2 sweet peppers, halved and seeded
  • 1 red onion, sliced
  • 1 tbsp olive oil
  • Salt and pepper
  1. 1Heat a charcoal or gas grill to medium heat, about 350°F (175°C). Brush the grates lightly with oil.
  2. 2Rub the peppers with the olive oil and season with a pinch of salt and pepper.
  3. 3Place the sausages on the grill and cook for 15 to 20 minutes, turning every few minutes, until browned all over and cooked through to 160°F (71°C) for pork or 165°F (74°C) for chicken. Grill the peppers alongside for 8 to 10 minutes until softened and lightly charred.
  4. 4Toast the bread slices on the grill for 1 minute per side.
  5. 5Serve the sausages hot on a board with the peppers, raw onion, pickles, mustard and the bread.

Tip: Keep the heat at medium. The garlic and paprika in the sausage can scorch over a very hot flame.
