  • 4 to 6 Italian sausage links (Pecorino Romano Italian or Hot Italian)
  • 1 1/2 lb baby potatoes, halved
  • 3 to 4 small sweet or mildly hot peppers, left whole
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • Freshly ground black pepper
  • 1/2 cup water
  1. 1Heat the oven to 425°F (220°C). Heat the olive oil in a large cast-iron skillet over medium heat.
  2. 2Add the potatoes cut-side down, season with the salt and pepper, and cook for 5 minutes until they start to turn golden.
  3. 3Nestle the sausages and peppers between the potatoes. Add the water, cover with a lid or foil, and cook for 8 minutes to steam everything through.
  4. 4Uncover and carefully move the skillet to the oven (the handle will be very hot, so use oven mitts). Roast for 15 to 20 minutes, turning the sausages once, until the potatoes are tender and the sausages are browned.
  5. 5Check with a food thermometer that the sausages have reached 160°F (71°C) inside. Rest for 5 minutes and serve, keeping the hot skillet on a trivet.

Tip: Pierce the peppers once with a fork so they do not burst in the oven.
